Strawberry Spinach Salad

Is there anything better in the summer then a PERFECT side salad. A healthy one too! This summer salad has me hoping for summer, not just for the weather, but the FOOD. (I'm such a foodie). This recipe is simple, and fast, and it can be prepped hours in advance, then tossed together when ready. Plus, it's VERY versatile. *See notes.




Ingredients:

Spinach

Strawberries

Walnuts or Sliced Almonds

Berry Balsamic Poppyseed dressing (I just use the store-bought stuff.) Or you could make your own.


Directions:

1.) Toast almonds. You can do this numerous ways. On the stove, or in the oven. I love to toss it on the stove with some butter, and brown sugar. - Yum. You had me at brown sugar. For a healthier option: do it in the oven!

2.) Wash, & cut strawberries into quarters/halves depending how big they are.


3.) Wash spinach, and pat excess water with paper towel.


4.) Add ingredients into a bowl. I LOVE these Stainless Steel Mixing Bowls. 5.) Drizzle with dressing. Start off small here. You can't take away, but you can always add more! I find a little goes a long way!





As the recipe is written, this salad is perfect as a side or starter, but here are a few ideas to make it a main dish:

1.) Add Chicken - you can of course add grilled chicken to this salad, it's the

2.) Bread - it fixes everything, am I right? This salad is also very versatile, and is not limited to just "spinach and strawberries". However, I prefer it "plain".


*If you have a spinach and arugula mix - try that!

*If you want to try blueberries, raspberries, or even mandarin oranges - you can!

*You can also add in some cheese - feta cheese is perfect. (not the pre crumbled stuff here)

*If you want a extra crunch, you can also add in some red onions.



To make ahead:

Dress the salad as shortly as possible before serving. If you don't plan to eat all of it right away, I recommend splitting the salad, and only dressing what you plan to eat right away.





To store: This salad is NOT good as a leftover (when dressed). However, you can store leftover undressed salad in the fridge for about 3 days!
