I never thought gluten free pizza would be something I'd ever have to eat. When my eczema got out of control and I had to go gluten and mostly dairy free, I refused to give up all of my favourite foods: including pizza on Friday Nights.

Our family tradition on Friday's is to either order pizza or make it homemade and watch a new movie together as a family. To be honest, growing up I never liked pizza, but it was an acquired taste for me as the years went by. My husband and kids could eat pizza every day for every meal, so let's just say I learned to like it. Now, I look forward to our pizza and movie nights every single week.

Directions:

In a medium mixing bowl combine flour, yeast and salt. Mix well. In a seperate bowl combine water, honey, and olive oil. Pour over dry mixture. Mix using a wooden spoon / your hands to form a ball. Knead it for about 2 minutes. Cover with beeswax wraps or a towel to allow it to rise for about 20 minutes, until it's doubled in size. While it's resting, butter your pizza stone (just enough to cover the bottom to prevent sticking. Sprinkle some cornmeal onto the bottom. Roll pizza dough onto pizza stone. Bake at 425 (with toppings) for about 15 minutes.

Notes: *This dough can be sticky in order to work with it, I find it best to use your hands.

*Again do not deviate from this 1 to 1 gluten free flour.. it's tried and true.

*Non-gluten free option: You can substitute regular white flour, and it will turn out.
