3 of my GO-TO recipes for Breakfast

Breakfast – the most important meal of the day, they say! However, my husband believes that the more you eat, the more you eat! So, that's why I’m CONSTANTLY hungry, and eating, while he is not. (Maybe that’s also why I’m packin’ on the lbs.)! But hey, I’ve also been either pregnant, or breastfeeding for like the last 4 years – so like, I’m feeding for 2, am I right?


Anyway.. I’ve compiled a LIST of my FAV go-to tried and true recipes! 3 for breakfast!! 3 for lunch, and 3 for dinner is coming soon, maybe some appies too? Let me know if you want to see those!

These are simple, delicious, and GREAT even for the picky eaters in the fam. Some are healthy, some are not, we don’t discriminate in our house when it comes to food! So.. let’s get into the recipes!



1.) Almond Flour Pancakes – Allrecipes is the original recipe! These pancakes are packed full of protein, they’re fluffy, and taste DELICIOUS. They’re super easy, take 10 minutes to prep, and 10 minutes to cook!


Ingredients:


- 2 Cups of Almond Flour - ½ Cup of water - 2 TBSP maple syrup - 4 Eggs - ½ tsp salt


For Cooking:

1 teaspoon oil, or as needed


Directions:


Whisk together all ingredients in a bowl until batter is smooth. Heat oil in skillet over medium heat, and drop batter onto the griddle, and cook until bubbles form, and the edges are dry, about 3-5 minutes. Repeat with remaining batter. Serve warm with maple syrup, or your desired pancake toppings.




2.) Bacon, Egg Casserole

This one is GREAT for larger crowds, or if you want to prep ahead, and then pop it in the oven the following morning for a quick, and healthy breakfast! This is a recipe from GiGi!!


Ingredients


- ½ pkg bacon

- 9 Eggs

- ½ C milk

- ½ C (or more) shredded cheese

- ½ C Sour Cream

- 2 green onions

- ½ tsp-3/4tsp salt

- ¼ tsp pepper


Directions:


- Cook bacon (See here: https://bit.ly/33mqAtu how I cook it in the OVEN while you prepare the rest of the casserole)

- In a large bowl, beat eggs. Add milk, sour cream, onions, salt and pepper.

- Pour into greases 9x13 baking dish. Crumble bacon and sprinkle on top.

- Bake, uncovered, at 325 for 40-45 mins, or until knife inserted near the centre comes out clean

- Let stand 5 mins


Tips:

*You can sub pre cooked bacon, However, I find fresh tastes better!

*You can adjust the time/heat. I’ve been in a time crunch, and cooked at 375 for 25-30 mins

*You can sub PLAIN Greek yogurt for sour cream



3.) French Toast Casserole

Another great recipe to pop in the oven, or for a large crowd! Thanks to eatingonadime for the recipe! Ingredients:


- ½ loaf of bread, plus both butts

- 4 Eggs

- 1 ½ Cups milk

- 4 TBSP Sugar (divided in half) - ¼ teaspoon salt

- 1 teaspoon vanilla extract

- 1 teaspoon ground cinnamon


Instructions:

-Spray bottom of 9x13 pan with cooking spray. -Cut bread into chunks, and spread evenly.

-In a separate bowl, mix together eggs, milk. 2TBSP sugar, salt and vanilla and pour over bread, mixing to coat

-In a small bowl mix remaining 2TBSP sugar, and cinnamon. Sprinkle this mixture over the entire pan.


If you want to eat: Cover and place in fridge overnight (You CAN eat it immediately, but it’s much better if you let it sit overnight). Cook at 350 for 45-50 mins


If you want to freeze: Cover with foil, and freeze. When ready, thaw overnight in fridge. Cook at 350 for 45-50 mins.


Optional TIPS: If you’re afraid of it drying out, place a few dabs of butter on top when you bake it. Serve with icing sugar and maple syrup.
